Fava bean soup

For 4 people:
300 g of dried fava beans
1 onion
3 cloves of garlic
1 lemon
parsley
0.5 tsp chilli
0.5 tsp cumin
0.5 tsp sweet paprika
extra virgin olive oil
salt
stock cube
Let the fava beans soak for at least 12 hours, then bring them to a boil in two liters of vegetable broth until soft (if the stock were to shrink too much, add more water).
Meanwhile, prepare a mixture with the onion, garlic, a tablespoon of parsley and lemon juice, optionally using a blender.
Now add the spices: pepper, paprika and cumin; mix well.
When the beans are soft, remove the soup from the heat and stir in the beaten, toss and season with salt.
Cook a few minutes and serve by pouring in every dish a drizzle of extra virgin olive oil and garnish with additional parsley.
