Indian style rice and lentils

For 4 people:
200 g of brown rice
200 g lentils
100 g of peas
1/2 cauliflower
2 tomatoes
2 onions
1 potato
1 tablespoon of extra virgin olive oil
3 bay leaves
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 red pepper
sea salt to taste.


Cut the cauliflower into florets and diced potato.
Slice the onions, chilies and tomatoes.
Heat oil and add onions, bay leaves, potatoes, chilies and spices.
Stir quickly without browning.
Add the tomatoes, lentils, cauliflower, peas, rice, 1/2 litre of water and a pinch of sea salt.
Cover and cook for about 20/25 minutes.
Once cooked, serve, serve with toasted wholemeal bread and ...
