Bulgur pilaf with tofu

For 4 people: 3 tablespoons olive oil 1 cup of bulgur or maragarina-(burghul and precooked)-1 small chopped onion-2 cups vegetable stock or water--1/4 teaspoon oregano-1 pinch of freshly ground pepper-250 gr. tofu-tofu or 1 teaspoon 2 tablespoon red miso-Sesame salt or regular salt


Melt margarine in a heavy skillet.
Add the bulgur and onions, and saute for 5 minutes. Add the broth, oregano and pepper, cover and bring to a boil.
Reduce the heat and simmer for 15 minutes, or until all the liquid has been absorbed. Mix the tofu with shoyu into a bowl and mash together, then add the bulgur. Serve hot spiced with Sesame salt.
To change, add 2 tablespoons chopped parsley just before serving.
