Pepper ratatouille

For 4 people:
2 yellow peppers-2 red peppers-2 green peppers-1 Kg of ripe tomatoes-2 medium onions-2 cloves garlic-4 tablespoons of extra virgin olive oil-salt-pepper-herbs (e.g. basil or thyme)
Washed, cleaned and cut into strips sliced tomatoes and peppers.
Peeled and sliced onions.
Peel and thinly slice the garlic.
Put a little oil in a large frying pan, let it warm up, fry as soon as the garlic, add the onion, sauté a little, add the peppers and cook for about 10 minutes.
Add the tomatoes, season with salt and pepper and simmer over low heat and 15/20 minutes covered pot for others.
If the vegetables tend to dry out too much, reduce the heat, or add a few tablespoons of water or tomato sauce.
Cook until peppers become tender.
After cooking and before serving, sprinkle the peppers with chopped Basil or thyme.
