250 ml of vegetable milk (spelt, oat or natural soy)
2 tablespoons flour with black charcoal
2 tablespoons of pumpkin seed oil (or olive)
1/4 teaspoon nut powder
a pinch of nutmeg
salt
A black sauce a bit outside the box, somewhere between Halloween and Shrek, made with a special flour with charcoal, which allows you to play in the kitchen with the contrasts of colors to create unusual and original dishes.
This time we prepared a sauce for stuffed cannelloni filled with leeks and pumpkin and the result was very satisfactory both for the eyes and for the palate!
Pour a small portion of vegetable milk (about 100 ml) in a thick-bottomed saucepan and turn the heat to medium-low flame.
Add the flour and melt it with the milk using a whisk and, without stopping to stir to avoid lumps, add the remaining milk, oil, nut, salt and nutmeg.
Keep stirring until you get the desired consistency.
