Spaghetti with vegan sausages and chives

180-200 g of ciriole (long pasta typical of Umbria)
2 vegetable sausages or wurst (made with seitan or tofu)
200 g cherry tomatoes
2 tablespoons pitted black olives
1 spring onion
a small bunch of chives and some fresh chives flowers (they are edible)
extra virgin olive oil
salt
A quick and easy to prepare, yet delicious and also very colorful to be presented on the table!

Thinly slice the onion and brown in a large pan with a little oil, combining almost immediately even hot dogs (after cold meats).
Add the tomatoes cut in halves or quarters, season with salt and sauté briefly, then add the pitted olives and chives.
Drain the pasta cooked al dente and let it cook for a minute with this incredibly rich seasoning before serving warm.
