For 6 people
500 g Basmati rice
the juice of 2 lemons
1 clove of garlic
1 piece of fresh ginger (roughly as big as a garlic clove)
1 teaspoon cumin
1 tsp ground coriander
0.5 teaspoon of turmeric powder
vegetable oil
salt
Boil the rice in twice its volume of lightly salted water.
Meanwhile finely chop garlic and ginger.
In a pan heat a little oil, then add the chopped garlic and ginger, stir in the turmeric, cumin and coriander.
Stir with a wooden spoon and cook over gentle heat for a few minutes, then add the boiled rice and stir gently.
Cook on low heat for a few minutes and, towards the end of cooking, add lemon juice.
Mix again, let the fire still a minute or two and serve hot.
