For 4 people
4 ripe bananas
1 fresh pineapple
1 tablet of dark chocolate
.5 liter of milk rice
2 teaspoons agar agar flakes
2 tablespoons rice malt syrup
1 Apple, cut into small pieces (optional)
1 pinch of whole sea salt
cocoa powder or barley soluble coffee to decorate
Fair trade organic bananas and pineapple arrive fresh and great great.
To prepare the mousse, warm rice milk, add a pinch of salt, seaweed agar agar flakes and simmer for a few minutes. You can add a bit of malt and possibly Apple cut into small pieces.
In the end, when shut down, add mashed bananas well (if they are very ripe, or possibly put them through to the Blender) and mix everything well.
Put in a container only and let it cool.
The algae serves as a natural gelling and within a couple of hours will be ready a good mousse solidified.
Do you pour over melted chocolate (dark cacao type min. 70%).
Servants in a saucer first laying a thin slice of pineapple, then a portion of mousse and maybe coconut slice and decorates the dish with powder.
