Cream of onions

For 4 people: 2 white onions - 2 yellow onions - 2 red onions - 1 shallot - 2 potatoes - 4 liter of vegetable broth - 1 sprig of parsley - extra virgin olive oil - salt - pepper
Peel the potatoes and cut into cubes.
Peel and cut onions and shallots into very thin slices, then fry in a saucepan with a tablespoon of oil, along with potatoes, diced.
Pour in the broth, season with salt and pepper and cook for 25-30 minutes.
Remove from heat and blend everything well.
Serve hot with a drizzle of olive oil, a sprinkling of chopped parsley and some thin onion rings for garnish.
