Lemon pudding

3 organic lemons
5 tablespoons rice flour
1 teaspoon agar agar
70-120 grams of agave syrup
1 liter of soy milk or soy-rice
a few drops of natural vanilla aroma (alcoholic)
Wash the lemons with a small brush, dry them thoroughly and peel, being careful not to take the white part, using just the yellow skin ...
Put the peel in milk and boil.
Boiling point is reached, leave a little to steep, then strain through a sieve, if you want to remove the lemon rind.
Put in a cup a portion of milk with the flour, the agar and the agave syrup.
Add the remaining milk together with the one boiled with lemon and bring back to a boil.
Reached boiling incorporate the contents well mixed and dissolved the cup and continue stirring simmer on low heat for at least 3 minutes.
Pour into moulds and leave to cool.
