250 g flour type 00
200 g coconut flour
100 g of sucanat
1 tablespoon agave syrup
1 tablespoon of apple cider vinegar
3 tablespoons coconut milk
50 g cocoa powder
1 piece of vanilla bourbon
200 ml water
60 ml sunflower oil
50 ml of vegetable milk (better than soy or rice)
1 teaspoon of cream of tartar or baking powder
20 g of icing sugar
30 g coconut flour (from dust at the end on top)
Mix flour 00 with coconut flour, combine the brown sugar, cocoa and coconut milk and mix well.
Add water, oil, vinegar, agave syrup and vanilla and mix all the ingredients, with care that the dough is smooth.
Now melt the cream of tartar in vegetable milk and add it to the rest of the dough.
Line with parchment paper a round cake pan (preferably one of those with the zipper), pour in the mixture and bake in preheated oven at 180° for about 30 minutes.
When the cake is still warm, sprinkle the surface with icing sugar.
Allow it to cool and fill with the sprinkling of coconut flour.
Enjoy your meal!
