Baked rice with vegetables

For 4 people
300 g rice
1 Eggplant
1 large red or yellow bell pepper
2 carrots
1 onion
extra virgin olive oil
spices to taste
Diced Eggplant and peppers.
Let stand 20 minutes approx the Eggplant with a little salt, then let it blow up a pan with peppers with a ton of oliosenza finish cooking for 15 minutes.
Take a baking sheet, put the chopped onion and a little olive oil and bake at 200° c.
Grate the carrot and keep a moment aside.
Once the onion is browned add the rice and cover with water.
Cook for about 15 minutes and then add the carrot (carrot you put raw) and the other vegetables and continue cooking for another 5/10 minutes.
If the rice is dry, add a little water.
When cooked, stir well.
You can season with spice you prefer: the curry is good, but you also try with other spices to taste.
