Delicious panzanella

600 g of bread
350 g of smoked tofu
10 pitted black olives
4 ripe tomatoes
1 bunch spring onions
1 medium cucumber
6 basil leaves
1 teaspoon chopped fresh chilli tragliato
1/2 cup of apple cider vinegar
extra virgin olive oil
salt and water
Soak for half an hour the bread with water, salt and vinegar, making sure they soak it well.
The bread, it's slightly wrung crumbled in a bowl adding the remaining ingredients, cut into small pieces.
Lastly add the smoked tofu cut into chunks.
Seasoning ingredients as for a salad by adding carefully and only if need salt and pepper.
