Veg paella with brown rice

160 g rice Brown rice
2 artichokes
1 carrot
1 stick of celery
2 leeks
1 medium potato
1 red onion
1 clove of garlic
white wine
1 teaspoon turmeric or 1 sachet of Saffron
Salt
the juice of 1 lemon
1 teaspoons of extra virgin olive oil
Soak the rice for at least 45 minutes.
Cut the artichokes into thin strips and soak with some lemon juice.
Clean the carrots and cut into slices, Peel the potatoes and dice, finally cut the celery into small pieces.
Peel the garlic and, having deprived of the soul, crush it with a knife and put it to Brown with 2 tablespoons water and 2 teaspoons of oil.
Add the leek and onion finely chopped, then add the rice, wait until it becomes transparent and then add a piece of white wine and water.
Add the other vegetables, salt and saffron and cook over low heat for about an hour.
