Pea soup with mint

For 4 people
400 g peas
2 tablespoons extra virgin olive oil
2 tablespoons of white flour
800 ml vegetable stock
fresh mint


Boil the peas in very little water and then mix without drain.
Prepare a white sauce with olive oil, flour and vegetable stock: cold mix the flour and oil, put on the fire and add slowly the vegetable stock.
Stir with a whisk and cook over low heat, stirring constantly, until it thickens.
Add the peas, add salt and cook for a few minutes.
Turn off the heat and serve, garnishing with fresh mint cream.
