100 g shelled walnuts
1/2 fresh head of medium sized radicchio
2 or 3 cloves of garlic
extra virgin olive oil
salt and pepper
1 slice of bread soaked in water and vinegar and squeezed


Blend all the ingredients in a food processor until the mixture becomes homogeneous pink colour.
Season with salt and pepper.
It is excellent both as a condiment for pasta and as dough for sandwiches.
