Penne with radicchio

For 4 people:
500 gr penne rigate
2 heads (a bit big) of radicchio
1 medium onion
200 ml soy cream
1 tablespoon of curry
a bit of balsamic vinegar
olive oil e.v.
salt and pepper


Wash and dry the chicory, then cut it into chunks.
Finely slice the onion and Brown it in oil, wait until it becomes transparent, add the radicchio.
When both have browned, sprinkle the balsamic vinegar (do by eye, not a lot) and let it dry completely.
Meanwhile, Cook the pasta in salted water.
Add salt and stir in onions and radicchio curry, soy cream and pasta cooked al dente and drained well.
Do stir it all for a few minutes in a soup-tureen and serve.
