Zucchini with mint

Ingredients

For 4 people:
1 kg zucchini
1 medium onion
1 sachet of saffron
1 bunch of fresh mint
1 tbsp oil
30 g margarine
salt

Instructions

Trim and cut into four lengthwise zucchini.
With a spoon, remove the seeds and cut the flesh into chunks of 2-3 cm.
Chop the onion, clean mint peeling the leaves from the stem.
Brown the onion in oil and margarine and, after 5 minutes, add the chunks of zucchini.
Let them brown over high heat for 5 minutes and cosparegeteli with saffron.
Add 2 tablespoons of water, add salt and let it stew over a fire for 10 minutes.
Sprinkle with plenty of fresh mint chopped after cooking.
Mix well.
