Zucchini gruel

For 4 servings
120 g chickpea flour
2 zucchini
4 tablespoons extra virgin olive oil
300 ml water
salt
Wash the zucchini, remove tips and cut into thin slices.
Fry in a pan with 4 tablespoons of olive extra virgin oil and a few tablespoons of water, add a little at a time when the zucchini tend to dry out too much.
Meanwhile, prepare a batter with water and chickpea flour, stemperandola carefully so as not to make lumps: it must be a fairly liquid.
Add a pinch of salt.
When courgettes are soft enough, pour the batter into the pan and cook for 2 or 3 minutes per side, until the porridge will not have taken a golden appearance.

Io ho aggiunto cipolle tagliate finissime e un po' di curcuma.
È piaciuta a tutta la famiglia, bimbi compresi. Per me grande soddisfazione perché fatico a far mangiare veg anche i bambini
