For 4 people: 800 g potatoes-3 or 4 sprigs of Rosemary-4 cloves of garlic-4 tablespoons of extra virgin olive oil-Salt-water


Peel the potatoes and cut them into pieces. Clean and chop the garlic.
In a large thick-bottomed Pan fry the garlic in the oil and add the potatoes, Rosemary and salt. Stir well then add several tablespoons of grease to make them water and cook covered, stirring occasionally and adding a little water as it dries.

Da me si chiamano "patate in Purgatorio" e sono buonissime, provate a sostituire il rosmarino con 2 foglie di alloro per un sapore più delicato...
