Basic dough for pizza-2 potatoes-7/8 mushrooms-salt-pepper-garlic-parsley-olive oil
Peel the potatoes and cut into pieces of a few centimetres; boil in salted water and when are soft, but be careful that you don't without falling apart, drain and rinse them with cold water.
In a pan, Saute 2 cloves garlic roughly chopped if you choose to remove them before you season the pizza, or chopped up if you want to leave in the finished dish. When the garlic is golden, add the chopped mushrooms and salt. The mushrooms will lose a lot of water, when this will begin to settle on the bottom of the Pan, turn up the heat and evaporate. Towards the end of cooking (6 or 7 minutes) add the pepper and potatoes and mix carefully. After several minutes, when the potatoes and the mushrooms are well blended, remove from heat and deliver the pizza dough previously greased with olive oil.
Bake at 250-300 degrees for a quarter of an hour.
Serve hot with a drizzle of extra virgin olive oil and raw parsley distributed over the potatoes and mushrooms.
