Dumplings in almond sauce

For 4 people: 1 kg of peeled almonds 100 g-vegan dumplings-200 ml soy cream-1 bunch of parsley-grated rind of 1 lemon-3 tbsp oil-Salt-black pepper
Chop separately the almonds and parsley.
Fry the almonds in a little oil, add the cream, grated lemon rind, chopped parsley, salt and mix carefully until thicken the sauce.
Meanwhile, cook the gnocchi in salted boiling water, drain and pour into the pan by mixing them thoroughly with the sauce.
