Salad with three grains (rice, barley, spelt)

For 6 people:

500 gr of three grains: rice, barley, spelt (or, if you prefer, only rice)

1 yellow pepper

1 red pepper

1 celery

1 courgette

1 carrot

1 tbsp capers

100 g mushrooms in oil

3 or 4 tablespoons of extra virgin olive oil
some mint leaves
pepper (before serving taste and adjust accordingly, according to your liking)


Cook the rice with salted water according to the instructions on the packaging (usually 15-18 minutes), drain, pass under cold water, drain again and place in a bowl.
Apart from steaming the vegetables cut into small cubes (except the capers, olives and the mushrooms!) for about 20-30 minutes and drain. Add them to the rice, adding the capers, olives, mushrooms and flavoring, mix all ingredients well and serve.

Prova questa insalate primavera con riso orzo e farro.
1) Cuocere il Riso Gallo 3Cereali Riso, Farro e Orzo in acqua bollente salata per 12 minuti. Scolare e raffreddare con acqua fredda.
2) Prendere le verdure, lavarle e tagliarle a piacere. Saltarle con poco olio in una padella anti aderente, salarle e portarle a fine cottura.
3) Tagliare a striscioline il basilico. In una pirofila unire il riso alle verdure e unire il riso e mescolare bene.
