Sunshine salad

1 lettuce (lettuce or Escarole or Endive), 1 large yellow bell pepper, 4 or 5 plum tomatoes, 1 organic Lemon, salt, 1 tsp cumin seeds and toasted Fennel seed 1 (or 1 of oregano and Basil 1 or other eerbe and spices to your liking), extra virgin olive oil, 1 pinch of asafetida (optional) , 1 pinch of mustard yellow powder (optional)
Prepare a bed of lettuce leaves well cleaned and torn into Salad Bowl; the lettuce is usually neutral enough to do "wingman" to most important ingredients and flavor.
Cut into slices a big yellow pepper ripe but hard (or 2 small) and four or five red plum tomatoes but firm. Add a lemon peel grated organic, salt and a teaspoon of cumin seeds and fennel roasted and well cooled. If you don't like cumin or fennel, you can replace them with oregano or Basil or other herbs or spices or herbs to your taste; cumin and fennel have a digestive and refreshing and therapeutic effect are very suitable for summer.
Another Spice (not spicy) which is very useful for health is the asafetida: digestive, fights constipation and strengthens the body. It gives a slight hint of garlic to foods but without exaggeration. If you want to use it, scioglietene a pinch (it's used in pizzuchi, otherwise the taste becomes too strong and the effect becomes laxative) in a tablespoon of lemon juice. You can also add, if you like, a pinch of yellow mustard powder. Let stand for 10 minutes, then add two tablespoons of extra virgin olive oil and pour in the bowl over the lettuce. Serve immediately.
