Spicy soymeat meatballs

200 g green soy
2 large potatoes
1 piece of seaweed
salt
parsley
spices to taste
extra virgin olive oil
breadcrumbs
Soak the soy in the water for at least one night, better 24 hours.
Drain from the soaking water, put in the pot with about twice as much water, the small piece of seaweed (optional, but il hepls cooking the legumes first) and boil as per instructions on the package (my 1 hour and anyway until all the water has absorbed) , adding after half an hour also the potatoes peeled and cut into chunks.
Turn off, let it cool, then coarsely crush the soy and potatoes with a fork, add the salt, the chopped parsley, the favorite spices (cumin, coriander, pepper, chillies, nutmeg, turmeric or what you have), form with the dough the round meatballs slightly larger than a walnut (if the dough is still too moist add breadcrumbs).
Roll the meatballs into the breadcrumbs, place them on a baking pan covered with parchment paper, quickly pass over a drizzle of extra virgin olive oil and bake, in an already hot oven, at 180 degrees C for 20-30 minutes, until they have taken a nice golden color.
