Baked ziti with tomatoes

For 8 people
500 g of ziti (Neapolitan pasta)
80-100 g vegan cheese (like mozzarella or smoked cheese slices)
8 large ripe tomatoes
1 large onion
1 clove of garlic
chili

extra virgin olive oil
Prepare the tomato sauce.
Chop the garlic and the onion and chop the tomatoes.
Sauté the chopped garlic and onion in a tablespoon of olive oil, add the tomatoes into small pieces, add salt, season with a pinch of cayenne pepper and simmer on low heat for 15-20 minutes, drying the vegetation water of tomatoes.
Once cooked add a few leaves of basil coarsely chopped by hand.
Meanwhile boil 2 litres of salt water to cook the pasta: when it starts to boil, throw old ziti and cook al dente (for the time, follow the directions on the package, they are generally similar to those of other pasta), then drain.
Oil an ovenproof dish, arrange the drained ziti al dente and cover with the tomato sauce, trying to distribute it evenly over the pasta.
Before baking arrange the vegan cheese slices on the top, then bake in the oven at 190° C for about 20 minutes.
Once cooked, remove from oven and serve hot.
