Tasty tofu with garden vegetables

2 medium sized onions
1 stalk of celery
1 carrot
1 fennel
tofu (I used the one with garlic ursinus)
1 tablespoon of extra virgin olive oil
salt
spices to taste
Slice vegetables with a mandolin.
Sauté the onion in a tablespoon of extra virgin olive oil.
Join the other vegetables and cook slowly, adding a little water.
Season with salt and pepper and add any spices to taste (I'm partial to the paprika).
When all vegetables are cooked enough add tofu, cut into small pieces.
Add salt to taste and serve.
