Sweet potato meatloaf

3-4 large leeks, tender
2 sweet potatoes
1/2 brick of tofu
nutmeg
Salt
3 tablespoons extra virgin olive oil
breadcrumbs
Clean and cut leeks into rings.
Parboil for 15 minutes and set aside.
Blanch tofu for around a couple of minutes and then blend.
Cook in a pressure cooker the potatoes for 5 minutes and put them through a food mill.
Mix all the ingredients together, spread the meatloaf in a pan by decorating the surface with a fork, sprinkle with breadcrumbs and bake at 180° C for 20 minutes.
