1 kg of pumpkin
3 medium potatoes
1 Golden onion
1 celery
1 carrot
1 teaspoon cumin seeds
1 teaspoon turmeric
1 teaspoon dried mixed herbs (thyme, Sage, oregano, Rosemary)
extra virgin olive oil
Salt
Chop the onion finely and FRY in a clay pot.
Add the pumpkin and diced potatoes, celery and carrot, roughly chopped.
Add enough water to cover the vegetables, add the spices and herbs; Add salt, stir, put the lid on and cook over low heat 45 minutes.
