Ingredients

For 4 people: 4 large artichokes 1 lemon-2 cloves garlic-some mint leaves-1 bunch of parsley-olive oil-salt-pepper

Instructions

Wash and clean the artichokes by removing the outer leaves and cutting away both the spikes that the stem (leave only the piece closest to the head).
Make a mixture with garlic, parsley, mint and season with oil, salt, pepper and lemon juice.
Put the chopped inside the artichokes, then place them upside down in a dish with high sides so that they are well attached, add salt also externally with a little salt and toss with a couple of tablespoons of oil, then cover them with water up to the stem.
Cook in the oven at 180° C for about an hour.
Alternatively you can also cook them on low heat, in a pot from the edges high enough, by evaporating the water.
