200 gr margarine-150 g of potato starch-175 g flour-25 g of corn starch-100-150 g sugar-2 teaspoons baking powder--1/2 teaspoon baking soda-1 lemon-soy milk
Preheat the oven to 180 degrees.
Knead the margarine with the sugar.
Add potato starch, flour and starch, stir well and after start adding the milk gradually working the dough until it becomes creamy but not liquid, and no lumps!
Grate the zest of 1 lemon and add it along with the baking soda and baking powder and mix well.
Grease a pan with margarine and pour in the mixture.
Bake for about 20-25 minutes.
With this basic recipe you can, with the help of other ingredients, create a series of different cakes:
With almonds: just add two handfuls of chopped almonds to the dough.
With carrots: add, before baking, a large grated carrot and two handfuls of almonds, and, if you like, a handful of raisins.
Cocoa: cocoa and 3 tablespoons dough to stir very well.
Stuffed with orange: grate the mixture, instead of lemon, orange peel and then, once cooked, cut it in half and fill it with orange Marmalade.
