Seitan and potatoes

For 2 people: about 2 ounces of seitan (preferably sliced), 2-3 medium potatoes, 1 onion, olive oil
In a pan pour some water, a little olive oil, sliced onion and a pinch of salt.
Let it FRY for a few minutes. Meanwhile, Peel the potatoes and cut them into small pieces.
Then add the potatoes to the onions, and simmer covered for about 20 minutes, until the potatoes are almost cooked.
Add some water as, when needed, and salt to taste.
Cut the slices of seitan in thin strips, and add them to the potatoes.
Sauté 5 minutes again, turn off the heat, add a little olive oil, and serve.
Halfway through cooking, you can add some chopped rosemary leaves, which goes well with the potatoes.
