Soup with fava beans and tomatoes

For 6 people
500 g dried peeled fava beans
3 tomatoes
1 shallot
chili
aromatic salt
extra virgin olive oil
some chives (for garnish)
Cook the fava beans in a couple of liters of water for 40-50 minutes, until they are thoroughly cooked.
Remove from the heat and blend with an immersion blender directly in the cooking pot: we like coarsely puree but of course you can vary the consistency to your liking.
Put the beans on gentle heat.
Peel and chop the shallots and add to fava beans.
Wash tomatoes, cut into cubes and pour into the pan, add the aromatic salt and pepper: for quantities in this case adjust according to taste (we like a little spicy).
Leave on the heat a few minutes, it is not necessary to cook the tomatoes.
Serve with a generous round of cold-pressed virgin olive oil and a distinctive flavour, then garnish with some chopped chives wire with your hands.
