Delicious baked green peppers

For 4 people
4 small green peppers
1 brick of tofu in natural from 250 g
150 ml soy cream
a handful of chopped parsley
1 tablespoon of extra virgin olive oil
breadcrumbs
nutritional yeast flakes
Herb salt of Provence
Wash the peppers, cut in half into two parts and clean the inside dai dai pips.
Arrange on a baking sheet and add salt slightly.
Prepare the filling by pressing the tofu with a fork after cutting into pieces: I shake because I wanted to get a filling rustic and not completely homogeneous.
Add the chopped parsley, soy cream, oil, salt and mix well with a fork.
Lastly add 1 tbsp nutritional yeast powder and another of breadcrumbs (adjust by eye for consistency, that shouldn't be too hard) and mix again.
You have this compound inside the peppers, sprinkle the surface with the breadcrumbs and nutritional yeast powder and bake at 180-200° C until the surface becomes Golden and the peppers are cooked.
