Iridofu (scrambled tofu)

For 3 or 4 people: 1 tablespoon oil-1 small Onion-diced-1 small carrot cubes-700 gr. about tofu crumbled very small-2 tablespoons toasted sesame seeds and minced (optional)--1/2 teaspoon salt-2 tbsp shoyu-1 pinch of pepper
Heat oil in a pan, add the onion and carrot, and cook for 3 or 4 minutes until the onion is golden. Add the tofu and the rest of the ingredients. Stir continuously doing simmer for about 5 minutes or until tofu became light, dry and fluffy. Serve hot or cold.
The Iridofu is one of the most popular dishes of tofu in Japan; It has a light texture and dry and look and taste very similar to scrambled eggs. It can be prepared either sweet or salty, or even with the addition of sliced vegetables that bring you sometimes in scrambled eggs.
