Seitan with lemon and ginger

400 g diced 1 medium onion sliced seitan – – 1 organic Lemon – 50 g pitted green olives – a piece of fresh ginger, about 2 cm – 1 clove of crushed garlic – .5 sachet of Saffron – olive oil – Salt and pepper
1. Wash the lemon and, with a sharp knife, then cut into strips asportatene yellow skins. Then squeeze the juice into a bowl. Peel and finely slice the ginger, and cut strips from it too.
2. In a frying pan, pour 2 tablespoons of olive oil, add the onion, garlic and ginger and sauté the fire. Pour even morsels of seitan and cook for 5 minutes.
3. Dissolve the Saffron in a little hot water. Pour it then, along with half of the lemon juice and Peel, the seitan, add salt and pepper, stir and simmer covered, gently, for 20 minutes.
4. Add the sliced olives and remaining lemon juice, mixing well. Turn off the heat and season with salt and pepper.
