Artichoke and potato soup

For 4 people: 800 g potatoes, 2 onions 4 artichokes, novelli, 200 gr of peeled tomatoes, 3-4 Tablespoons extra virgin olive oil, oregano and salt, a lemon.
Clean the artichokes by removing the toughest leaves and thorns, wash them, cut them in half, remove the inner hair, cut into wedges and put them in a bowl of lemon water.
Peel the potatoes and cut into cubes. Finely slice the onions, chop the tomatoes.
Put all the vegetables in a pan, add the oil, a pinch of oregano, salt and one liter of water. Cover and cook for an hour. The soup should be fairly dense.
Add salt to taste and serve by adding olive oil to taste.
