Worker's veg curry

200 grams of tofu
1 bag of frozen grilled vegetables
1 tin of chickpeas
1 onion, cut into rings
0.5 can of chopped tomatoes, cubed
extra virgin olive oil
minced garlic
curry
salt
parsley
basil
Sauté the garlic and onion in oil.
Add crumbled tofu, frozen vegetables, chickpeas, well drained and rinsed, diced tomatoes, a pinch of salt, according to taste, parsley and Basil curry idem.
Simmer until vegetables are soft.
Serve hot accompanied by cereal or bread.
This curry is ready in 15 minutes.
Obviously prepared with fresh organic vegetables it is much better, but if you are late, you're tired and you don't have time...
